2 cups cooked Freekeh (cracked grain only)
500g minced (finely ground beef, chicken or lamb
1 egg, lightly beaten
1 cup chopped pine nuts
3 cloves garlic, crushed
1/2 cup chopped, fresh coriander
1/2 cup chopped parsley
2 tsp ground coriander seed
1 tsp ground cumin
1 tsp cinnamon
1/4 tsp ground cloves
1 tsp finely ground black pepper
1 tsp salt
2 tblsp olive oil extra olive oil for cooking
- Mix all ingredients together well and and knead for 5 minutes or until the mixture comes together. Shape into balls or patties (size as required).
- Brush lightly with extra olive oil and bake in a moderate oven (180ºC or 360ºF) for 15-20 mins until firm and golden ( cooking time will depend on size of kibbies).
- Can also be cooked on a grill/barbecue plate.
