Zesty Blueberry Freekeh and Quinoa Breakfast Bowl

Ingredients (serves 2)

1 cup Cracked Freekeh and Quinoa rinsed
2 cups Coconut milk (or any milk)
1 tsp Coconut Oil
Pinch of salt

2 tbsp Honey
1/2 Lemon, zested
1 cup Blueberries
2 tbsp Desiccated coconut
2 tbsp Chia seeds

Method

  1. Rinse grains under cold water.
  2. Melt coconut oil in a a medium saucepan. Add freekeh and quinoa and stir frequently until slightly brown and quinoa starts to pop. Add milk, salt and bring to boil. Reduce heat and simmer covered for 9-12 minutes, or until liquid has absorbed and grains are tender. Drain well once cooked
  3. Stir through honey and lemon zest. Gently fold in blueberries.
  4. Divide among serving bowls and top with coconut and chia seeds.
