Almond Broccoli Freekeh & Quinoa Croquettes

Ingredients
1/2 cup Cracked Grain Freekeh & Quinoa Blend, uncooked
1 Broccoli floret
1 Egg
Handful of almonds, chopped
Olive oil
Method
- Bring half a cup of Cracked Grain Freekeh & Quinoa blend to boil in 1 and a half cups of salted water. Cover, and simmer for 15 minutes. Remove from heat, and leave covered for another 10 minutes. Fluff with fork and add to mixing bowl.
- Blanch for 1 minute a brococli floret cur on the perpendicular, making a rice-style texture. Drain and add to bowl with freekeh.
- Toast a handful of almonds. Chop roughyl to size of the grain and add to bowl. Season mixture well.
- Add a lightly beaten egg. Combine and make 4 golf balls onto oven tray. Spray with olive oil and bake for 20 minutes at 180 degrees Celsius.
