Zesty Blueberry Freekeh and Quinoa Breakfast Bowl

Ingredients (serves 2)
1 cup Cracked Freekeh and Quinoa rinsed
2 cups Coconut milk (or any milk)
1 tsp Coconut Oil
Pinch of salt
2 tbsp Honey
1/2 Lemon, zested
1 cup Blueberries
2 tbsp Desiccated coconut
2 tbsp Chia seeds
Method
- Rinse grains under cold water.
- Melt coconut oil in a a medium saucepan. Add freekeh and quinoa and stir frequently until slightly brown and quinoa starts to pop. Add milk, salt and bring to boil. Reduce heat and simmer covered for 9-12 minutes, or until liquid has absorbed and grains are tender. Drain well once cooked
- Stir through honey and lemon zest. Gently fold in blueberries.
- Divide among serving bowls and top with coconut and chia seeds.
